Since reading ‘Get The Glow’ by Madeleine Shaw, I have been trying very hard to eat cleaner, smarter and cut all the rubbish out of my diet. I am only on day 4 so far and but I am already suffering from withdrawal symptoms from the sugar, giving me headaches and sickness, but I have already lost 3lbs which shows its doing something right?!
I have been obsessing on Pinterest all recipes that are clean and I have already have given some recipes out of Madeleine’s Book ago including my Gluten Free Banana Bread!
After a good pinning session, I came across this Super Simple, 3 Ingredient No Bake Energy Balls Recipe from Better With Cake and knew I had to give it a try! Less than 10 minutes to make, they are so delicious and taste like cookies! I am in love and definitely plan on whipping another batch up ASAP! Find the recipe below.
Ingredients:
- 150g Cashew Nuts – Raw/Unsalted
- 7 Medjool Dates with the Stone removed
- 1 tsp Vanilla Extra
- Pinch of Sea Salt
How to:
- Whizz up the cashew nuts in a food processor or blender until crumbly.
- Add the dates and whizz together until it forms a loose sticky ‘dough’
- Add the vanilla extract and pulse until combined
- Using your hands, roll a heaped teaspoon of ‘dough’ into a ball, pop into a container and refrigerate until needed!
- *Optional – I added a few sprinkles to a couple of my balls, just because!
Nutritional Value per Ball if you make 20, based on my ingredients: Tesco Organic Cashew Nuts, Tesco Wholefood Medjool Dates & Dr Oetker Vanilla Extract:
Kcals – 65
Fat – 3.6g
Carbs – 6.1g
Protein – 1.6g

I can’t believe how easy these look to bake, well not bake! Well done on your clean eating. Isn’t it just so strange to have withdrawal symptoms from sugar? It’s ridiculous how much hidden sugars are in everyday foods, even the ones marketed as ‘low fat/diet/sugar free’. Like, how the hell are we supposed to avoid it.
